1οΈβ£ Preheat & Prepare
π₯ Preheat oven to 375Β°F (190Β°C).
π§ Lightly grease a 9×13-inch baking dish.
2οΈβ£ SautΓ© the Spinach
- Heat olive oil in a skillet over medium heat.
- Add onion and cook until soft (about 3 minutes).
- Stir in garlic and cook for 30 seconds.
- Add spinach and cook until wilted. Remove from heat.
3οΈβ£ Layer the Dish
- Arrange half of the sweet potatoes in an even layer in the baking dish.
- Spread half of the spinach mixture on top.
- Repeat with the remaining sweet potatoes & spinach.
4οΈβ£ Make the Creamy Sauce
- In a bowl, whisk together milk, cream, Dijon mustard, salt, pepper, and paprika.
- Pour the mixture evenly over the layered dish.
5οΈβ£ Add the Toppings & Bake
- Sprinkle the top with shredded cheese, Parmesan, and breadcrumbs.
- Cover with foil and bake for 25 minutes.
- Remove foil and bake for another 15 minutes, until golden and bubbly.
