👩‍🍳 Instructions:

  1. Make the dough:
    • In a bowl, mix mashed potatoes, egg, salt, and flour into a soft dough. If it’s too sticky, add a little more flour.
  2. Prepare the filling:
    • Pit the plums and fill each with ½ teaspoon sugar mixed with a pinch of cinnamon.
  3. Form the dumplings:
    • Roll out the dough on a floured surface to about ¼ inch thick.
    • Cut into squares large enough to wrap each plum.
    • Place a plum in the center of each square, pinch the dough closed around it, and roll into a ball.
  4. Cook the dumplings:
    • Boil a large pot of salted water. Gently lower the dumplings in and cook until they float to the surface, about 8–10 minutes.
    • Remove with a slotted spoon.
  5. Coat in breadcrumbs:
    • In a large skillet, melt butter and add breadcrumbs. Toast until golden brown.
    • Roll each dumpling in the breadcrumbs while still warm.
  6. Serve warm, sprinkled with more cinnamon sugar if you like!
