Instructions:

  1. Preheat oven to 350°F (175°C) and grease a baking dish.
  2. In a bowl, mix oats, baking powder, cinnamon, nutmeg, and salt.
  3. Add grated carrots, apple, nuts, and raisins/dates (if using).
  4. In another bowl, whisk eggs, milk, and vanilla. Pour into the oat mixture and mix well.
