- Cook the potatoes: Boil until tender, then mash while still warm. Let cool completely.
- Make the dough: Add flour, egg, butter, and salt to the cooled mashed potatoes. Knead until soft and smooth. Add more flour if too sticky.
- Prep the plums: Remove pits. If large, cut in half. Fill each with 1 tsp sugar (and a pinch of cinnamon if desired).
- Form dumplings: Roll out dough on a floured surface (~½ inch thick). Cut into squares large enough to wrap around each plum. Place a plum in the center, pinch to seal, and roll into a ball.
- Boil dumplings: Drop into boiling salted water. When they rise to the top, cook for 3–4 more minutes. Remove with slotted spoon.
- Prepare breadcrumb coating: In a large skillet, melt butter and toast breadcrumbs until golden. Add sugar and mix well.
- Coat the dumplings: Roll each warm dumpling in the sweet toasted breadcrumbs.
