🍳 Directions

1. Prepare the Batter:

  • In a mixing bowl, mash the cottage cheese with a fork until soft (you can blend it for a smoother texture).
  • Add the eggs, sugar, vanilla, lemon zest, and salt. Mix until combined.
  • Stir in the flour and baking powder to form a sticky dough.

The dough will be soft — not kneadable — but scoopable. That’s perfect!

2. Heat the Oil:

  • In a deep pan or pot, heat oil to 340–350°F (170–180°C).
  • Test the oil with a small drop of batter: it should bubble and rise to the top slowly.

3. Fry the Donuts:

  • Use 2 spoons or a small cookie scoop to drop small balls of dough into the hot oil.
  • Fry in batches — don’t overcrowd the pot!
  • Fry for 3–4 minutes, turning gently, until golden brown on all sides.
  • Remove and drain on paper towels.

4. Finish and Serve:

  • Dust with powdered sugar.
  • Serve warm with a side of apricot jam, sour cherry preserves, or eat them plain — they’re irresistible either way!
