
🍳 Directions
1. Prepare the Batter:
- In a mixing bowl, mash the cottage cheese with a fork until soft (you can blend it for a smoother texture).
- Add the eggs, sugar, vanilla, lemon zest, and salt. Mix until combined.
- Stir in the flour and baking powder to form a sticky dough.
The dough will be soft — not kneadable — but scoopable. That’s perfect!
2. Heat the Oil:
- In a deep pan or pot, heat oil to 340–350°F (170–180°C).
- Test the oil with a small drop of batter: it should bubble and rise to the top slowly.
3. Fry the Donuts:
- Use 2 spoons or a small cookie scoop to drop small balls of dough into the hot oil.
- Fry in batches — don’t overcrowd the pot!
- Fry for 3–4 minutes, turning gently, until golden brown on all sides.
- Remove and drain on paper towels.
4. Finish and Serve:
- Dust with powdered sugar.
- Serve warm with a side of apricot jam, sour cherry preserves, or eat them plain — they’re irresistible either way!

- If your cottage cheese is very wet, drain it first with cheesecloth or a sieve.
- Add a dash of cinnamon to the batter for a warm twist.
- Replace lemon zest with orange zest for a brighter flavor.
