- Blend it all: In a blender (or whisk by hand), mix all ingredients until smooth. Let batter rest 30 mins if you have time — helps the texture!
- Heat a nonstick pan (8–10 inches) over medium heat. Lightly butter the pan.
- Pour & swirl: Pour ¼ cup batter into the pan and quickly swirl to cover the surface in a thin layer.
- Cook: 1–2 minutes until the edges look set and bottom is lightly golden. Flip carefully and cook 30–60 seconds more.
- Repeat: Butter pan as needed. Stack crepes on a plate and cover with a clean towel to keep warm.
