Vinaigrette Dressing
- ¼ cup olive oil (extra virgin for best flavor)
- ¼ cup balsamic vinegar (or substitute with red wine vinegar for a milder taste)
- 2–3 tbsp fresh lemon juice (brightens the flavors)
- 1 clove garlic, minced (or ½ tsp garlic powder for convenience)
- 1 tsp Italian seasoning (or a mix of dried oregano & basil)
- ¼ tsp kosher salt (adjust to taste)
- ¼ tsp black pepper

Caprese Pasta Salad
- ½ lb dried pasta (farfalle, penne, or rotini work well)
- 8 oz fresh mozzarella pearls (or cubed mozzarella)
- 2 cups grape tomatoes, halved (or cherry tomatoes)
- ¼ cup fresh basil, thinly sliced (chiffonade)
- Salt & pepper to taste
- Optional: 1 tbsp honey (to balance acidity), ¼ cup red onion (thinly sliced for crunch), or ¼ cup toasted pine nuts for texture.
