- 1 lb (450g) ground beef (or turkey/chicken)
- 1 small onion, diced
- 1 bell pepper, diced
- 3 cloves garlic, minced
- 1 (15 oz) can black beans, drained & rinsed
- 1 (15 oz) can pinto beans, drained & rinsed
- 1 (15 oz) can corn kernels, drained
- 1 (10 oz) can diced tomatoes with green chiles (Rotel)
- 1 (15 oz) can enchilada sauce (red or green)
- 2 cups beef or chicken broth
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- ½ tsp oregano
- Salt & pepper to taste
- 2 cups shredded cheddar cheese (+ extra for topping)
