Ingredients

  • 1 lb (450g) ground beef (or turkey/chicken)
  • 1 small onion, diced
  • bell pepper, diced
  • 3 cloves garlic, minced
  • 1 (15 oz) can black beans, drained & rinsed
  • 1 (15 oz) can pinto beans, drained & rinsed
  • 1 (15 oz) can corn kernels, drained
  • 1 (10 oz) can diced tomatoes with green chiles (Rotel)
  • 1 (15 oz) can enchilada sauce (red or green)
  • 2 cups beef or chicken broth
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp oregano
  • Salt & pepper to taste
  • 2 cups shredded cheddar cheese (+ extra for topping)
  • Optional toppings: sour cream, cilantro, avocado, jalapeños, tortilla chips
