🧀 Crispy Parmesan Roasted Potatoes

🔥 Directions:

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment or foil.
  2. In a bowl, toss halved potatoes with olive oil, garlic powder, paprika, salt, and pepper.
  3. Add Parmesan and toss again so the cheese sticks to the oiled surface.
  4. Arrange cut side down on baking sheet.
  5. Roast for 35–40 minutes, until golden and crisp.
  6. Sprinkle with parsley and serve with dipping sauce or sour cream.

💡 Tip: The cheese caramelizes on the bottom — don’t skip lining the pan!

🧈 Ingredients:

  • 1½ lbs small baby potatoes
  • 4 tbsp butter, melted
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt & pepper
  • Fresh thyme or rosemary (optional)
  • Extra butter or cheese for topping (optional but YES)

  1. Boil potatoes in salted water until fork-tender (about 15–20 minutes). Drain.
  2. Preheat oven to 425°F (220°C).
  3. Line a baking sheet. Place potatoes on it and gently smash with a glass or potato masher.
  4. Mix melted butter, olive oil, and garlic. Spoon over each potato.
  5. Sprinkle salt, pepper, and herbs.
  6. Bake for 20–25 minutes until crispy and golden.
  7. Optional: sprinkle shredded cheese in the last 5 mins. 😍
