Microwave Method (Fastest!):
- Mash banana in a bowl. Add eggs, yogurt, and vanilla — mix well.
- Stir in shredded coconut, baking powder, and cinnamon (if using).
- Pour into a lightly greased microwave-safe mug or bowl.
- Microwave on high for 2½ to 3 minutes, or until set.
- Let cool slightly. Top with more coconut, yogurt, or fruit if you like!
Oven Method (Optional):
- Bake at 350°F (175°C) for about 15–18 minutes in a small ramekin.
💡 Tips:
- Swap banana for 2–3 soaked dates if you prefer.
- Want a chocolate version? Add 1 tsp cocoa powder or a few dark chocolate chips.
