Microwave Method (Fastest!):

  1. Mash banana in a bowl. Add eggs, yogurt, and vanilla — mix well.
  2. Stir in shredded coconut, baking powder, and cinnamon (if using).
  3. Pour into a lightly greased microwave-safe mug or bowl.
  4. Microwave on high for 2½ to 3 minutes, or until set.
  5. Let cool slightly. Top with more coconut, yogurt, or fruit if you like!

Oven Method (Optional):

  • Bake at 350°F (175°C) for about 15–18 minutes in a small ramekin.
