Palacsinta are thin, delicate Hungarian pancakes, similar to crêpes, but softer and slightly eggier. They can be sweet or savory, filled with jam, chocolate, cottage cheese, or even meat! This classic dish is a staple in Hungarian households and is often served as a dessert or light meal.
🛒 Ingredients (Makes ~10-12 pancakes)
✔ 250 g (2 cups) all-purpose flour 🌾
✔ 2 eggs 🥚
✔ 500 ml (2 cups) milk 🥛
✔ 250 ml (1 cup) sparkling water 🫧 (for a lighter texture)
✔ 1 tbsp sugar (for sweet pancakes) ❄
✔ 1 pinch salt 🧂
✔ 1 tsp vanilla extract (optional) 🍦
✔ 2 tbsp melted butter or oil 🧈
🛑 For savory palacsinta, omit sugar and vanilla!

1️⃣ Make the Batter
- In a large bowl, whisk the eggs with sugar and salt.
- Add half of the milk and flour, then mix until smooth.
- Gradually pour in the remaining milk, sparkling water, and melted butter, stirring constantly to prevent lumps.
- Let the batter rest for 20-30 minutes for a smoother texture.
2️⃣ Cook the Pancakes
- Heat a non-stick skillet over medium heat and lightly grease it with butter or oil.
- Pour a ladleful of batter into the pan, swirling it to cover the bottom.
- Cook for about 1 minute, until the edges lift slightly, then flip and cook for 30 seconds more.
- Stack the finished pancakes on a plate and cover them with a clean towel to keep them warm.
