🍍 Hawaiian Pineapple Cake


👩‍🍳 Directions:

1. Preheat Oven:

Preheat to 350°F (175°C). Grease a 9×13 inch baking dish.

2. Mix Cake Batter:

In a large bowl, whisk together flour, sugar, baking soda, and salt.
Add eggs, vanilla, and crushed pineapple with juice. Mix just until combined.
Fold in nuts and/or coconut if using.

3. Bake:

Pour batter into the prepared baking dish.
Bake for 30–35 minutes, or until a toothpick comes out clean.
Let it cool completely before frosting.

4. Make Frosting:

Beat cream cheese and butter until fluffy.
Add powdered sugar and vanilla, then add pineapple juice (or milk) 1 tbsp at a time until smooth and spreadable.

5. Frost and Serve:

Spread over cooled cake. Garnish with more coconut, pineapple tidbits, or chopped nuts if you like.
