🇭🇺 Lecsó – Hungarian Pepper-Tomato Stew


🧑‍🍳 Instructions:

  1. Sauté Onions:
    Heat oil in a large pan over medium heat. Add sliced onions and cook until translucent.
  2. Add Peppers:
    Stir in sliced peppers and cook for 10 minutes, stirring occasionally, until softened.
  3. Add Tomatoes & Paprika:
    Stir in chopped tomatoes and sprinkle in the paprika. Season with salt and pepper.
  4. Simmer:
    Cover and cook for about 15–20 minutes until vegetables are tender and stewy. Stir occasionally. If you want it more saucy, add a splash of water.
  5. Optional Add-ins:
    • Add sliced smoked sausage and cook through.
    • Crack in a couple eggs during the last few minutes and stir for a scrambled texture.
    • Serve over rice, with crusty bread, or even with nokedli (Hungarian dumplings).

💡 Tips:

  • Use Hungarian wax peppers for the most authentic taste. Bell peppers work too, but they’re sweeter and less punchy.
  • Fresh garden tomatoes make all the difference.
  • You can make it vegetarian, or load it up with sausage or bacon for a heartier version.
